Maryland Hot & Cheesy Crab Dip

A favorite dip in many bars and restaurants in Maryland. This delicious hot crab dip can be served with fresh bread, crackers, pretzels, celery or on top of chicken!
The locals call this "Chicken Chesapeake" and serve in quesadillas.
Maryland Crab Dip Ingredients:
  • Lump Crab Meat
  • Cream Cheese (softened)
  • Mayonnaise
  • Sour Cream
  • Cheddar Cheese
  • Ground Mustard
  • Lemon Juice
  • Old Bay Seasoning
  • Worcestershire Sauce
Beat cream cheese to a creamy, smooth texture...Add mayonnaise, sour cream, cheddar cheese, mustard, lemon juice, Old Bay Seasoning and Worchester Sauce to beaten cream cheese and mix till combined.
Finally: Add lump crab to mix by folding gently to avoid breaking up the meat.



Place in casserole dish and bake 375 degrees until browned along edges (about 25-30 minutes).
May be slow-cooked until heated thoroughly in crock pot. (3-4 hrs.)

Crab Dip Shopping List
  • 1 pound lump crab meat
  • 8 ounces cream cheese
  • 1/2 cup mayonnaise
  • 3/4 cup sour cream
  • 12 oz. shredded cheddar cheese
  • Juice of 1/2 lemon (may use bottled lemon juice 1 tsp.)
  • 1/2 teaspoon ground mustard
  • 2 teaspoons Old Bay seasoning
  • 2 teaspoons worcestershire sauce

Crabs can be a challenge to get to the pot!
Cook: 2 -3 tablespoons of Old Bay Seasoning in one inch of boiling water. Cover and bring to steam then lower heat to a low boil and cook for 15 minutes.

Crabbing off to a great start!

If you live in the coastal regions of North Carolina get your crab nets ready...
This season is off to a great start!
Here's Saturday afternoons catch of nice sized blueclaws. We caught about 20 or so with little returns to the water. We crabbed in New Bern along the bulkhead at the end of Neuse Blvd.
Bait: Chicken and mullet caught with cast net on drop lines.

Baked Clams Season

Time to start fine tuning my baked clam recipes...

I made my clams this time sauteing mushrooms with onions, garlic and celery till caramelized in butter / olive oil and tossed in red pepper near the end then folded with clams.
Brought to a boil and added to stuffing.

Seasoned with fresh ground pepper and Old Bay. Topped off with Romano cheese / Italian seasoning then baked hot around 400 to crisp up the bread stuffing.

Delicious!

You can easily make this using aluminum baking clam shells and store bought canned clams.

Enough work! Back to crabbing...
Been looking around Long Island for some crab spots and found a few "Oldies and Goodies" are still around and are giving up some nice crabs. Typically, crabbing is best in the early fall on long Island where the crabs are full of meat and shells are hard. A hard shell translates to the sweetest crab meat!

One of my childhood favorite spots is located in Blue Point, LI at the end of Blue Point Avenue. The old dock was rebuilt since the 60's but still has the iconic gazebo we would see out the windshield through September morning fogs as we headed toward it. I remember this most because it was when hearts raced in anticipation of what was soon to be...



I tried this dock last year and came up with some nice crabs with my oldest son on two occasions. To put it into perspective... We planned on fishing 6 hand lines but ended up using only 2 because as soon as the first line was set up the action had already started. There was a little size culling but we ended up with 8-10 nice 6" + Jimmys for our afternoon snack.
Give the place a try and let me know how you did! Be sure to bring along light tackle rods for the large snappers that frequent the area with an occasional added bonus of a larger species if you're lucky.

Chicken legs on sale, the calendar says it's almost May, the temperature today will be nearly 80 degrees and the crab nets have spider webs on them. Sounds like a good time to head down to the pier and see if there are any hungry crabs!

Most of the crabs were 6" to 7" but this one topped out at 8"!
